NMSU has had a super busy first week here in Costa Rica! We have had all kinds of fun eclectic activities, from learning how to make arroz con pollo with doña Nidia (writing our story abroad one meal at a time) to experiencing all the flora and fauna through rafting in one of the most biodiverse regions of the World. Not only that, we also visited the Costa Rican Humanitarian Foundation - Fundación Humanitaria Costarricense where we learned about poverty, inequality, and the power of hope. And to end our busy week, we finished off in Manuel Antonio. Is there a better to conclude the week than swimming in the Pacific Ocean and living the Pura Vida lifestyle? We think not!!
